Cheesy Damper

Damper is a traditional Australian bread, commonly prepared over the campfire. It is a beautiful treat that can be prepared using many different ingredients and is a lovely lunchbox snack that is quick and easy to make! I like my damper with a bit of a spicy kick to it so I’ve added chili, onion and garlic however, you can add any ingredients you like: leftover veggies such as mushrooms or spinach taste great in damper.

Method

  1. Preheat oven at 180°C.
  2. Sift flour into a large bowl and stir in melted butter and cheeses.
  3. Add seasonings and stir well.
  4. Making a well in the centre, pour in the milk and water and knead gently until mixture is smooth and sticky.
  5. Spoon mixture into greased muffin tray (or you can use muffin papers) and sprinkle oregano or mint over each.
  6. Bake for approximately 15 mins or until lightly gold on top.

Damper is traditionally quite a dry bread roll – it is perfect to serve along side soups!
